White Roulade Sponge

Amount           Ingredient
3 pounds              egg yolk
1 1/2 pounds        sugar

2 pounds              egg white
8 ounces              sugar

1 1/4 pounds       cake flour -- sifted

Method

  1. Beat together the egg yolks with the sugar until light and fluffy.
  2. Beat together the egg whites and sugar until soft peaks.
  3. Fold the flour into the egg yolks.
  4. Fold the beaten egg whites into the yolks.
  5. Spread out on parchment lined sheet pan.
  6. Place into 350' F still oven and bake for 20 - 30 minutes until light golden brown on top.
  7. Remove from oven and allow to fully cool at room temperature.
  8. Once cooled, cover with plastic and freeze until use.
These sheets can be used in everything from making Yule' Logs to a layer (once brushed with alcohol or simple syrup) in a tiramisu.
