Ingredient
lean duck strips
lean pork
duck pieces
pork butts -- cubed
mushroom
onion
duck liver
duck fat
white bread (soaked in 8 cups milk)
eggs
cornstarch
***************SEASONING****************
1/4 ounce salt
1/8 ounce pate spice
1/8 ounce shallots
1/8 ounce brandy

Method

  1. Sauté mushrooms and onions - separately.
  2. Soak bread in milk.
  3. Pass through grinder 12 lbs pork and 2 lbs duck.
  4. Robo liver, eggs, cornstarch, bread/milk, 1.5 lbs duck fat.
  5. Add ground meat to above
  6. Add robo mis to strip meat and mix well.
  7. Use demi-puff.
  8. Egg wash and cook at 375.


NOTES :

Torte should be cooked from a frozen state.
Can be made with any game or bird.
