Ingredient
Tomatillos -- cleaned, quartered
Garlic -- chopped
Cilantro
Onion -- small dice
Olive Oil
White Wine
Chicken Stock
Sugar -- 
Salt And Pepper --
Heavy Cream -- 

Method
 

  1. heat oil, sautée garlic, onion, tomatillos.
  2. add white wine reduce by 1/2.
  3. add cilantro and chicken stock. simmer for 10-15 min.
  4. blend smooth with shaft mixer and strain with china cap.
  5. season with salt and pepper, sugar and cream.
  6. add arrowroot to desired thickness.
