Ingredient
Mascarpone
yolks

whites
sugar

cream
gelatin

Method

  1. Whip the cream.
  2. Whip the Marzapane and yolks until smooth and no lumps.
  3. Heat the gelatin with a little Kahlúa.
  4. Whip the whites.
  5. Add by hand some of the whipped cream to the mascarpone to loosen.
  6. Temper the Gelatin with some of the whipped cream and add to cream.
  7. Fold in the whites followed by the whipped cream.
  8. Mixture should be smooth and silky with no lumps.
NOTES : Egg whites should not be whipped too stiff or else filling will
look grainy.
