Truffle Ganache

Amount 1 qt  4 1/2 lb  4 oz  tt

Ingredient cream White chocolate butter kirsch

             White Truffles

Amount 1 qt  4 lb  4 oz  tt

Ingredient cream Milk chocolate butter Amaretto

             Milk Truffles

Amount 1 qt  3 1/2 lb  4 oz  tt

Ingredient cream Dark chocolate butter Grand Marnier

             Dark Truffle
 

Method

1. As with all three, make the ganache, add butter, add alcohol to taste.
2. Wrap very well to keep dry.
