Potato Pancakes

chef's Potatoes
onions -- Processed, strained
all-purpose flour
egg yolk
kosher salt
black pepper

Method

  1. Peel, cube, and simmer potatoes (or steam) until tender.
  2. Run through food mill.
  3. Combine with remaining ingredients.
  4. Spread on 2 oiled sheet pans.
  5. Bake until golden brown.
  6. Portion into 3 squares.
  7. Package 2 to a portion.
  8. Freeze some for future use.
