Split Pea Soup with Sausage

Ingredient
split peas
chicken stock
ham hocks
Spanish onions -- 1/4 dice
garlic
bay leaf
crushed red pepper
celery stalk -- 1/4 dice
carrot -- 1/4 dice
cooked sausage -- 1/4 dice

Method

  1. Cover peas with stock. Boil 2 minutes, then remove from heat and let soak 1 hour.
  2. To peas, add ham, onion, garlic, and red pepper.
  3. Bring to a boil and add bay leaves.
  4. Simmer for 2 hours, stirring occasionally.
  5. Remove ham bone and cut meat into 1/2" pieces.
  6. Add meat, celery, carrot, and sausage.
  7. Cook for 1 hour more and check seasoning.
  8. Chill.
