Ingredients
20 oz Flour
12 oz Milk
1/8 tsp salt
1/8 tsp white pepper
1/8 tsp ground nutmeg
6 whole eggs
Method:
1. In bowl, mix eggs and milk
2. Sift flour, salt, pepper, and nutmeg
3. Add dry to wet and mix well with hand
4. let stand 1 hour before using.
5. Using a Spaetzle maker, (or other similar apparatus) work the dough
into salted boiling water.
6. Once the noodle floats, it is done.
7. Remove from water and place either directly into refrigerator or
into an ice bath to cool.
8. To reheat, simple sauté with butter and season with salt and pepper
as needed.
NOTES : Great for adding additional flavors.
