POBLANO CORN CHOWDER


Ingredients

4 each ears of corn
6 each Poblano peppers
2 quarts chicken stock
4 each potatoes -- peeled
4 each leek
4 ounces shallots
1 quart heavy cream
to taste salt and pepper

1.SAUTE LEEKS, SHALLOTS AND POBLANO PEPPERS TIL
TRANSLUCENT.
2.ADD POTATOES AND CHICKEN STICK, SIMMER TIL SOFT
PUREE.
3.BLANCH AND SAUTE CORN, ADD TO BASE.
4.CHECK SEASONING BEFORE SERVING.
