
Harira Soup
Ingredients

2 1/4 pounds Lamb -- DICED
1 1/4 pounds Garbanzo Beans -- DRY
1 1/4 pounds Lentil -- DRY
2 1/4 pounds Parsley -- Chopped
2 1/4 pounds Tomato, Plum, Diced -- DICED
2 1/4 pounds Tomato Puree
1 1/4 pounds Celery -- DICED
1/4 cup Lemon Juice
1 1/4 pounds Brown Roux
1/2 teaspoon Saffron
4 ounces Butter
5 gallons Water
To Taste Salt And White Pepper
WASH BEANS AND LENTIL AND SOAK IN WATER FOR 24 HOURS.
SAUTE LAMB IN BUTTER, ADD PARSLEY AND SAFFRON.
COVER WITH WATER AND COOK FOR 15-20 MIN. ADD BEANS AND LENTILS AND COOK
FOR 10 - 12 MINUTES OR MORE.
ADD TOMATOES AND PUREE AND COOK UNTIL BEANS ARE COOKED.
SEASON WITH SALT AND PEPPER.
ADD LEMON JUICE AND ROUX AND BRING TO A BOIL, SIMMER FOR 8-10 MIN.
