Goulash


Ingredients

5 ounces Vegetable Oil
3 pounds Onion -- chopped
7 quarts Beef Stock -- Good flavor
6 pounds Top Round -- DICED
1/2 cup Tomato Puree
To Taste Salt And White Pepper
To Taste Marjoram
To Taste Caraway Seed -- GROUND
3 tablespoons Garlic
20 +/- Oz Roux
2 pounds Potatoes
9 ounces Paprika

SAUTE ONION AND GARLIC IN OIL UNTIL TRANSLUSCENT.

ADD PAPRIKA AND ROAST 1 MINUTE. (DO NOT BURN)

ADD TOMATO PUREE, MIX WELL AND PINCE'

ADD STOCK AND BRING TO A BOIL.

ADD BEEF AND SEASON, COOK UNTIL MEAT IS COOKED.

ADD POTATOES AND COOK TILL TENDER.

CHECK SEASONING.
