
Five Onion Soup
Ingredients

2 pounds Yellow Onion -- SLICED
2 pounds Red Onion -- SLICED
2 pounds Leeks, White Only -- SLICED
2 pounds Scallion -- SLICED
1 each Bouquet Garni
Thyme, Bay leaf And Parsley
1/2 Bottle White Wine
2 gallons Chicken Stock
12 ounces Butter
If Available Use Vidalia Or Maui Onions
1. MELT BUTTER. CARMELIZE ONIONS.
2. ADD LEEKS AND SCALLIONS. COOK UNTIL LEEKS SOFTEN.
3.DEGLAZE WITH WINE.
4.ADD STOCK, BOUQUET GARNI AND LET SIMMER 1 - 1 1/2 HRS.
5. CHECK SEASONING.
