Scones


Ingredients

8 lb butter
2 lb baking powder
6 oz salt
2 lb sugar
24 lb cake flour

1/2 gal eggs
2 gal buttermilk

For Scones:
vanilla
4 lb. currants
16 oranges zested

Scones - egg wash and AA sugar
Biscuits - egg wash and butter after baking

Use 80 qt. paddle, bake 400 conv.
