
Scallop Mousse
Ingredients
2 Oz Scallops -- Puree
6 Ea Egg Yolks
18 Oz Double Cream
5 Tbsp Shrimp Stock
For Savarin Molds:
brush insides of molds liberally with butter or use non-cooking spray
(Baker's Release)
Fill molds with mousse
place in baking dish with aluminum foil under to protect from scorching
bottoms
place water 1/2 way up mold
bake at 375' for 15 minutes till set.
