Roasted Red Onion

Amount            Ingredient
4 ea                     red onion
4 oz                     olive oil
4 oz                     water
4 oz                     balsamic vinegar
1 tsp.                  Pepper -- fresh ground

Method

  1. Remove core and end, and cut onions in half cross-wise.
  2. Use melon baller to remove center to form a cup.
  3. Combine oil, water, vinegar and pepper.
  4. Place onions in hotel pan and drizzle with the mixture.
  5. Bake, uncovered for 20 minutes until tender.
  6. Drain and cool. save juice for next batch.
