Rhubarb Compote


Ingredients

1 lb Rhubarb -- Peel & 1/2-inch dice
1/2 c sugar
1 1/2 oz honey
3 ea limes -- zest and juiced
1 1/2 ea shallots -- minced
1 oz garlic -- minced

Caramelize sugar, honey and lime juice. Add rhubarb, shallots and garlic;
cook until rhubarb is tender. Remove from heat, strain liquid and
reserve. Allow both to cool. Finish compote with zest.
