Ingredient
leeks, whites only
garlic -- minced
chef's potatoes
chicken stock
salt and white pepper
chives -- sliced thin
heavy cream
Method
Sweat leeks and garlic in olive oil until tender.
Peel and dice potatoes. Add to leek mix with stock, salt and pepper.
Cook until tender and puree. Pass through china cap to remove chunks.
Add chives and chill.
Add cream as necessary.
