
Panzanella
Ingredients

Roasted Red peppers
Celery or Fennel -- peeled
Red onion circles -- grilled
Black olives -- pitted
Spinach
Toasted pine nuts
Escarole
Stale bread -- without crust
Basil -- Chiffonade
Soak bread in ice water for 5 minutes. Squeeze water out. Rub between
hands to clump. Toss all ingredients in bowl and top with the chiffonade
of basil.
