Orange Sauce


Ingredients

Caramelized Sugar
Orange Juice

Place sugar in pan and caramelize. Squeeze in orange juice and mix till
all sugar dissolved. Do not cook too long after that or the citrus will
get bitter.

NOTES : Also can add white wine or stock of choice. Thicken if you want
with slurry.


Orange Sauce 2

Ingredients
-------- ------------ --------------------------------
36 ounces Orange Juice -- fresh
12 ounces Lemon Juice -- fresh
36 ounces Sugar -- +/-
16 ounces Grande Marnier


1. combine first three ingredients and cook to sauce consistency.

2. cool and add Grande Marnier.
