Mayan Tikin Xic Fish Marinade


Ingredients

6 tablespoons Annatto Seeds -- SOAKED OVERNIGHT AND DRAINED
1 tablespoon Black Peppercorns
1/2 tablespoon Allspice -- WHOLE
1 head Garlic -- ROASTED AND PEELED
10 cloves Garlic -- WHOLE
1 tablespoon Cumin Seeds
1/2 teaspoon Cloves
1 stick Cinnamon
To Taste Salt
1 cup Vegetable Oil
2 cups Seville(Bitter) Orange Juice
    Or A Mixture Of 1C. Orange Juice, 1/2 C. Grapefruit Juice, And 1/2 C. Mild Vinegar


GRIND ANNATTO SEEDS. ADD PEPPERCORNS, ALLSPICE, ROASTED AND RAW GARLIC,
OREGANO, CUMIN, CLOVES, CINNAMON, AND SALT. GRIND TO A PASTE.

DISSOLVE PASTE IN OIL, AND ADD ORANGE JUICE.

POUR MARINADE OVER FISH AND COVER FISH WITH BAY LEAVES. MARINATE FOR 3
HOURS OR OVERNIGHT.

GRILL OVER LOW COALS UNTIL COOKED.

GARNISH WITH PICKLED RED ONIONS, LIMES AND PLUM TOMATOES.
