Leek Souffle'


Ingredients

5 pounds Leeks -- SAUTEED
5 ounces Butter
5 ounces Shallots -- CHOPPED &SAUTE
5 cups Heavy Cream
30 each Eggs -- BEATEN
To Taste Salt And White Pepper
To Taste Nutmeg

1. SAUTE LEEKS AND SHALLOTS IN BUTTER. TRANSLUCENT

2. PUREE IN FOOD PROCESSOR

3. MIX PUREE WITH CREAM AND EGGS.

4. SEASON AND POUR INTO VEGELINE COATED 2 OZ. SOUFFLE CUPS.

5. BAKE IN WATER BATH (LOOSELY COVERED WITH FOIL)
IN 350 DEGREE OVEN UNTIL SET , APPROX. 20 MIN.
