Carrots Glazed With Ginger and Tarragon


Ingredients

1 pound carrots -- Root Veg. Method
1 tablespoon butter
1/2 teaspoon fresh ginger root -- grated
1/2 teaspoon lemon juice
1 teaspoon fresh tarragon -- chopped
2 cups Brown Sugar

* Fresh coriander may be substituted for the tarragon if you prefer.

1. Peel and trim carrots. Use the Root Veg. Method.

2. In a saucepan, Melt the Brown sugar, Butter, and add lemon juice.
Remove from heat and add ginger and tarragon. Season the glaze to taste.

3. Heat the carrots and toss them into the glaze to coat and serve
immediately.
