Flourless sheets

Ingredients

2 quarts yolks
4 pounds sugar
vanilla
2 1/2 quarts whites
2 1/2 pounds sugar
1 2/3 oz cocoa powder

Whip yolks and sugar and vanilla.
Whip whites and 1/4 total sifted sugar.
Fold in the rest of the sifted coca and sugar.

3 Quarts per sheet.
Makes 7 full size sheet pans.
