
Flan
Amount Measure Ingredient -- Preparation Method

1 gal eggs (72 eggs)
4 lb sugar
1 gal milk
1 gal heavy cream
salt
vanilla
Heat mild, sugar, cream, vanilla, and salt.
Temper eggs with heated mixture.
Pour into molds and bake one hour at 325'.
Note: Molds must have been preset with hardened
caramel for flan recipe before filling.
