
Chocolate Walnut Mousse

9 lb sugar
9 lb butter
4 1/4 lb cocoa -- sifted
84 ea yolks -- 3# 10oz.
3 lb Peter's Chocolate -- melted
2 qt heavy cream -- med. peak
rum
36 ea gelatin sheets
walnuts -- med. amt, med. grind
Cream together the butter and sugar in 20qt. mixer with whip.
Add the sifted cocoa to the butter and sugar.
Next add the yolks slowly, then the Peter's, and then the Gelatin.
Whip heavy cream.
Next fold all together adding walnuts last.
