Curry Sauce

Ingredient
onion
shallots
celery stalk
leak tops
spinach
curry powder
white wine
clear stock or liquid

Method

  1. Fine chop the onion, shallots, celery stalk, and leak top.
  2. Sweat these ingredients and add curry powder.
  3. Deglaze with white wine and add stock (clear liquid).
  4. Bring to boil.
  5. Add spinach and remove from heat.
  6. Blend immediately and pour blended mixture into ice bathed container.
Serving Ideas : Great with fish. Has nice bright green color.

NOTES : After blending, do not us last 1/4 of mixture, it will discolor
the remaining batch.
