Basic Crepe Batter

Ingredient
eggs
water
salt
cornstarch
flour
butter (clarified also works)
Method
Combine eggs, water, and salt and mix well.
Sift the flour and cornstarch together 2X.
Combine dry to wet and mix well.
Add butter.
Strain 2X.
NOTES : Best when savory.
This recipe was used in making 1/2 sheet trays of crepes used to
cover fish mousse terrines.
