whole coriander
black peppercorns
shallots -- minced
kosher salt
brown sugar

Method

  1. Coarsely grind spices in spice grinder and combine.
  2. Rub on meat and marinate. Best when seared and then baked.
NOTES : Yield: 2 Cups
