bread flour
water
powdered milk
high gluten flour
butter
sugared yolks
salt
sugar
cinnamon

Method

  1. Make sponge with first four ingredients in 20 qt.
  2. Add other except for yolks on top.
  3. When sponge rises enough to make crevasses in top mixture add yolks and mix.
  4. Place on sheet pan and refrigerate until next day.
