Ingredient
Nutex -- 2 1/2 qts. (Special Baking Shortening)
cake flour
baking soda
coca powder
cake flour
baking powder
milk powder
sugar
salt
water
eggs -- 3 quarts.
vanilla

Method

  1. Sift Dry using largest bowl, rack, and sifter.
  2. Mix with whip on 3rd speed the first 3 ingredients for 15 min. (Flour, Nutex, Baking Soda), Set timer.
  3. SCRAPE
  4. Alternate wet and dry, but reserve some liquid. Mix this on 3 for 5 min.
  5. SCRAPE
  6. Slowly add 1/2 of the reserved liquid and mix for an additional 5 min.
  7. SCRAPE
  8. Slowly add the rest of the reserved liquid and mix for additional 5 min.
  9. Portion, spin, and bake.


Baking:
Fill pans 1/2 full:
325 (1-1-2) for 9" cake
400 (2-1-2) for sheet cake

check after 40 minutes.

NOTES : The basis of the method of this cake is similar to the mayonnaise
method. Care must be taken so as not to break the emulsion by
adding too much liquid at a time.
