Caramel Ice cream

Amount             Ingredient
1 tub                     Hagen Daaz vanilla -- 2 1/2 gal
Recipe below     caramel -- warmed
3 qts                     whipped cream

- Caramel
4 lb sugar
1 pt water
1 qt cream

Method

  1. First make the caramel and let cool in hotel pan till just warm to touch.
  2. Soften ice cream in mixer and add the cooled caramel while machine is off and then mix to incorporate.
  3. Fold in the 3 qts. whipped cream.
  4. Place in pre-frozen, pre-labeled, hotel pans and immediately freeze.
