Breakfast Sausage
Ingredient
10 lb
Pork Butt -- cubed
660 grams salt
12 grams ground
black pepper
65 grams brown
sugar
4 grams fresh thyme
4 grams nutmeg
3 grams sage -- dry
2 grams chopped rosemary -- fresh
1 grams
clove powder
1 grams
cayenne
1 cup water
Method:
Mix dry ingredients.
Combine dry ingredients with meat.
Using a meat grinder, pass through 3/16 holed grinding plate one time.
Mix meat with water.
Make 1-2oz. patties and wrap in caul fat.
When cooking, be sure and sear the sausages before baking them in the
oven.
