Brownies

Amount                    Ingredient
12 1/2 lb                     sugar
7 1/2 lb                       butter
3 qt                             eggs
tt                                 vanilla
3 1/4 lb                       cocoa powder
5 1/2 lb                       bread flour
5 lb                             macadamia nuts -- slight chop

Method:
Using the standard "Creaming Method", cream together sugar and butter.
Slowly add eggs and vanilla.
Scrape the bowl.
Add cocoa powder and flour.
Scrape the bowl.
Add Macadamias and mix until just combined.
Spread over a parchment lined sheet pan and place into a preheated 325' F Convection oven.
Check after15 minutes.  The finished product should slightly rise and rebound to the touch.
Caution, overcooking will cause dry brownies.

For Storage:
After baking and cooling, cover with parchment and wrap with plastic.

For Eating:
Cover brownies with chocolate ganache and allow it to get cold.
Using a hot knife, cut the brownies into portions.

Note:
Small portions are advised as these brownies are very rich.
