Breadstick Dough

Amount                 Ingredient
1 gal                         milk
10 oz                        yeast
4 oz                          salt
4 oz                          sugar
4 oz                          rosemary
18 lb                         bread flour
4 lb                           butter

Procedure:
Make dough using standard "Straight Dough Method".
Portion dough into 14 oz. balls and rest overnight in the refrigerator.
Roll dough on sheeter down to 3 1/2 (about 1/2 inch).
Dock the rolled dough and place on back of sheet pan.

Storage:
Simply wrap in plastic and store in freezer.

For use:
Allow to thaw in refrigerator 24 hours prior to use.
While the dough is still on the back of a sheet pan, using a pizza cutter, cut the dough into 1 in. x 4 in. small bread sticks.
Bake the sheet pan of breadsticks into a preheated 350'F oven for about 15 to 20 minutes or until done.
Remove from oven and immediately brush with butter and sprinkle with kosher salt.
