Basic Consomme'

Amount            Ingredient

2 pounds             Mirepoix -- JULIENNED OR GROUND
6 pounds             Beef Or Chicken, No Fat -- GROUND
20 each               Egg White
24 ounces           Tomato Product
2 1/2 gallons       Stock -- NO FAT , GOOD FLAVOR
To Taste            Salt And White Pepper
1 ea.                  Sachet Of spices

Procedure
1.  Combine Mirepoix, meat, whites and tomato product and mix well.
2.  Add sachet of Spices.
3.  Add cold stock and heat until just simmering while stirring occasionally until raft forms.
4.  Simmer for 1 1/2 hours.
5.  Gently remove raft.
6.  Carefully strain through both a cheesecloth and a chinoise.  A coffee filter can also be used.
7.  Season to taste.  The consommé can also be reduced to strengthen flavor.
