Basic Cracker Dough

Amount            Ingredient
1 lb                     flour
1 lb                     cheese
1 lb                     butter

Procedure
1.  Cut butter into small cubes and let soften a little.
2.  Grate cheese.
3.  Mix all ingredients in mixer and make a log or square or whatever shape and wrap and freeze.
4.  Cut to desired thickness after frozen and cook in a 375'F degree convection oven for 5 minutes
    and then turn over to brown other side.

Note:
This is a very versatile recipe. For a harder cracker use less butter.
Add ingredients like chopped and dried apples, nuts, or even top with
honey and a little salt. The combinations are endless.

Makes about 1 sheet pan of thin crackers.
